Grilled Halloumi with Watermelon

Ingredients

  • 500 g Halloumi
  • 550 g watermelon
  • 1 vegetable onion
  • 2 Organic Limes
  • 4 tbsp olive oil
  • Salt
  • Pepper
  • 1 tbsp liquid honey
  • 3 sprigs Mint

Instructions

    Slice the cheese into 0.5 cm thick pieces, then cut into 3 x 2 cm squares. Peel and core the watermelon, slice it into 0.5 cm thick rounds, then cut into 3 x 2 cm rectangles.

    Peel and halve the onion, slicing into strips. Rinse limes under hot water, pat dry; cut one lime into wedges and squeeze juice from the rest.

    Whisk lime juice with oil, salt, pepper, onion, and honey to make a vinaigrette. Wash mint, shake dry, and pluck leaves from stems.

    Place cheese on a hot grill and flip every few minutes for 5–7 minutes. Arrange melon pieces on a plate in a tiled pattern, drizzle with the lime vinaigrette, and garnish with lime wedges and mint leaves before serving.
