Tomato Pasta with Leek

Tomato pasta with leek and shaved hazelnuts: Quick and easy to prepare, this dish provides many important vitamins and minerals.

Ingredients

  • 4 oz pasta (e.g., spiral pasta)
  • Salt
  • 7 oz leek (2 stalks)
  • 1 tbsp Olive Oil
  • 7 oz cherry tomatoes
  • 0.7 oz shaved hazelnuts
  • Pepper
  • 0.35 oz small piece of Parmesan cheese

Instructions

    Cook pasta according to package directions in plenty of boiling salted water until al dente.

    Meanwhile, clean the leek, halve the stalks lengthwise, wash and cut crosswise into approximately 1 cm wide strips.

    Heat olive oil in a large non-stick pan and fry the leek for 3 minutes over medium heat.

    Meanwhile, wash and halve the tomatoes.

  5. 5.

    Add hazelnuts to the leek and fry briefly.

  6. 6.

    Add tomatoes and season with salt and pepper. Add about 5 tbsp of water and cook for 2 minutes.

    Drain pasta in a sieve, drain, add to the vegetables and mix well. Season with salt and pepper.

    Serve tomato pasta on plates and grate Parmesan cheese over it.
