Soba Noodles with Broccoli, Edamame & Peanuts

Ingredients
- 60 g Peanuts
- 300 g Brokkolini (or broccoli florets)
- Salt
- 150 g frozen edamame (thawed)
- 4 Scallions
- 1 handful Coriander
- 300 g Soba Noodles (buckwheat noodles)
- 1 Garlic clove
- 10 g Ginger (1 piece of ginger)
- 2 Organic Limes
- 2 tbsp sesame oil
- 45 g Peanut butter (3 tbsp peanut butter)
- 3 tbsp Soy sauce
- 3 tbsp Rice vinegar
- Pepper

Roast peanuts in a dry pan over medium heat for 3 minutes; then let cool and roughly chop. Meanwhile, trim, wash, and blanch the brokkolini for 3 minutes in boiling salted water, then shock and drain. Blanch edamame in boiling salted water for 1 minute, shock, and peel. Trim, wash, and thinly slice the scallions. Wash, dry, shake, and roughly chop the coriander.

Cook noodles according to package directions in plenty of boiling salted water until al dente. Peel and finely chop the garlic and ginger. Squeeze the juice of 1 lime.

Drain the noodles, reserving some cooking water. Drain the noodles and mix with 1 tbsp sesame oil. Place peanut butter, soy sauce, rice vinegar, garlic, and ginger in a bowl and whisk with some noodle cooking water until smooth. Season with salt, pepper, and lime juice.

Heat the remaining sesame oil in a wok or large pan. Toss the soba noodles with brokkolini, edamame, scallions, and sauce over medium heat for 5 minutes. Taste and serve on plates, sprinkled with chopped peanuts and coriander leaves. Wash the remaining lime, slice it, and serve with the soba noodles, broccoli, edamame, and peanuts.
