Potato Goulash

Ingredients

  • 450 g onions
  • 2 cloves garlic
  • 800 g waxy potatoes
  • 2 tbsp olive oil
  • 2 tbsp Tomato paste
  • 500 ml vegetable broth
  • 10 g parsley (0.5 bunch)
  • Cayenne pepper
  • 1 tsp Sweet paprika powder
  • Salt
  • 50 g sour cream

Instructions

    Peel and finely dice the onions and garlic cloves. Wash, peel, and cut the potatoes into roughly sized pieces. Heat the oil in a large pot and sauté the onions with the garlic until translucent.

    Add the potatoes, stir in the tomato paste and let it brown slightly. Pour in the broth and simmer with the lid closed for 20-25 minutes, or until the potatoes are soft. Add more broth if needed.

    Meanwhile, wash, dry, and chop the parsley. Season the potato goulash with cayenne pepper, paprika powder, and salt. Stir in the sour cream and sprinkle with parsley and paprika.
