Tomato-Passion Fruit Salad with Shrimp

A fresh tomato and passion fruit salad featuring shrimp, inspired by Spoonsparrow.

Ingredients

  • 5 passion fruits
  • 1 red chili pepper
  • 1 Lime
  • 8 tbsp olive oil
  • Salt
  • 2 tsp sugar
  • 800 g cherry tomatoes
  • coriander
  • 12 raw giant shrimp
  • Cayenne pepper
  • 50 g coconut flakes (shredded)

Instructions

    Halve the passion fruits, remove seeds, scoop out flesh and finely chop.

    Slice the chili open, discard seeds, rinse and finely chop. Squeeze lime juice.

    Combine passion fruit puree with chili, lime juice, 4 tbsp olive oil, a pinch of salt and sugar.

    Rinse tomatoes and dice them small. Rinse coriander, pat dry and finely chop. Mix tomatoes and coriander with the passion fruit vinaigrette.

    Debone shrimp, rinse and pat dry. Heat remaining olive oil in a pan. Sauté shrimp, seasoning with salt and cayenne pepper.

    Shred coconut flesh into thin strips (a vegetable peeler works best). Arrange tomato salad on a plate, sprinkle coconut strips over it, and serve the sautéed shrimp on the side.
