Fruity Chicken Rice Salad

Ingredients
- 400 g rice
- 300 g Turkey breast fillet
- ghee
- 1 blood orange
- 0.5 Pineapple
- 200 g frozen peas
- 5 tbsp roasted cashew nuts
- Salt
- pepper (ground)
- 2 tbsp finely chopped basil
- 2 tbsp almond oil
- 1 tbsp orange blossom water
Instructions

Cook the rice according to package instructions and drain. Let cool. Wash, pat dry, and cut the turkey breast into small pieces. Heat 1 tbsp ghee and brown the turkey all over until golden brown. Season with salt and pepper.

Blanch the peas in boiling salted water for about 5 minutes and drain. Peel and filet the blood orange, then cut into small pieces. Peel the pineapple, remove the core, and cut into small pieces.

Combine the cooled rice with the turkey, peas, pineapple, orange, cashew nuts, basil, and almond oil. Season with salt, pepper, and orange blossom water and serve immediately.
