Ingredients
- 250 g arugula
- 200 g Raspberries
- 1 blood orange
- 4 tbsp balsamic vinegar
- 4 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 200 g smoked salmon
- 125 g mozzarella
Instructions

Wash, trim, and dry the arugula. Rinse the raspberries. Peel the blood orange thoroughly and cut out the segments. Squeeze juice from the remaining fruit flesh and whisk with balsamic vinegar, olive oil, salt, and pepper to taste.

Slice the salmon into strips and roll them into small roulades. Drain the mozzarella well and cut into small cubes. Arrange the arugula on plates, then top with salmon rolls, raspberries, orange segments, and mozzarella cubes. Drizzle the dressing over or serve it in small bowls separately.
