Tomato Omelette

Tomato omelette by Spoonsparrow – quick to prepare, healthy and perfect for a nutrient-rich breakfast or light lunch.

Ingredients

  • 3 tomatoes
  • 1 tbsp olive oil (10 ml)
  • 4 eggs
  • Salt
  • freshly ground pepper
  • Basil
  • 50 g Parmesan (37% fat in dry matter)

Instructions

    Wash and dice the tomatoes. Heat the oil in a non-stick pan, add the tomato cubes, and sauté over medium heat for 3–4 minutes.

    Whisk the eggs with 4 tbsp water, salt, and pepper; pour over the tomatoes in the pan and cook covered over low heat for about 10–15 minutes.

  3. 3.

    Wash the basil, shake dry, and pluck the leaves. Sprinkle the tomato omelette with basil and shave Parmesan on top.
