Ingredients
- 4 large tomatoes
- 2 balls mozzarella (ca. 250 g)
- 100 g bacon cubes
- 100 g green olives
- 1 tbsp capers
- 2 tbsp freshly chopped basil
- 4 tbsp olive oil
- 2 tbsp white balsamic vinegar
- 2 tbsp lemon juice
- Salt
- Pepper

Wash the tomatoes, cut off the stem ends and slice them into about 12 thick slices. Drain the mozzarella well and also slice it into about 12 pieces. Place the cheese on top of the tomato slices and arrange on plates or a platter.

Roast the bacon in a pan without added fat until crisp. Remove from heat and let cool slightly. Finely chop the olives and capers, then mix them with basil, olive oil, balsamic vinegar, and lemon juice. Season with a little salt and pepper, distribute over the tomato-mozzarella slices, and serve.
