Tomato Juice

Ingredients
- 2.5 kg ripe tomatoes
- 2 Bay leaves
- 1 sprig rosemary

Rinse the bottles hot and let them drain on a dish towel.

To peel the tomatoes, bring water to a boil in a pot. Prepare an ice bath in another bowl.

Meanwhile remove stems from the tomatoes and score the skin crosswise. Blanch the tomatoes for a few seconds until the skin starts to curl, then transfer quickly to the ice bath and peel off the skin.

Coarsely chop the tomatoes and cook them with bay leaves and rosemary in a large pot until soft or puréed, about 10–20 minutes. Purée the mixture with an immersion blender. Add more water if desired. Strain the puree and use a funnel to fill the prepared bottles, sealing quickly.
