Ingredients

  • 4 ripe tomatoes
  • 1 walnut-sized piece lemon grass paste
  • Salt
  • Cayenne pepper
  • 20 g fresh ginger
  • 4 shrimp
  • frying oil
  • wooden skewers

Instructions

    Rinse tomatoes, cut off the stem end and chop into pieces. Peel and finely grate ginger. Blend tomatoes, ginger, orange juice and lemon grass paste in a blender. Season with salt and cayenne pepper. Chill. Rinse ginger root and slice lengthwise into very thin slices.

    Pat shrimp dry. Heat frying fat to 170°C. Fry ginger slices and shrimp sequentially. Drain on kitchen paper. Thread shrimp onto wooden skewers. Briefly blend tomatoes again and pour into glasses. Insert shrimp skewers and garnish with ginger slices before serving.
