Asparagus Mousse

Ingredients

  • 400 g green asparagus
  • 1 tbsp butter
  • 75 ml vegetable broth
  • 1 tsp grated lemon zest
  • 1 tbsp Lemon Juice
  • 50 g crème fraîche
  • 2 Eggs
  • Salt
  • Pepper
  • allspice
  • Cayenne pepper
  • butter (for the molds)
  • arugula (or dandelion for garnish)
  • red pepper
  • curry powder (for dusting)

Instructions

    Wash asparagus, cut into small pieces and sauté in hot butter; pour in broth and cover to simmer gently for 15 minutes until tender.

    Preheat the oven to 175°C.

    Blend asparagus with lemon zest and juice as well as crème fraîche in a mixer; whisk in eggs and season with salt, pepper, allspice, and cayenne pepper.

    Grease the molds and fill them with the mixture. Place the molds in a large baking dish, pour hot water over them, and bake the custards for about 45 minutes.

    Arrange on plates with some green asparagus and arugula, sprinkle with pepper and dust with curry powder, and serve warm.
