Tomato, Cucumber, and Feta Omelette

Ingredients

  • 8 eggs
  • 2 tbsp butter
  • 2 tbsp heavy cream
  • 4 tomatoes
  • 2 green bell peppers
  • 1 cucumber
  • 100 g feta cheese
  • 2 tbsp lemon juice
  • Salt

Instructions

    Whisk the eggs with the cream and season with salt.

    Wash the tomatoes, quarter them, remove seeds, and dice.

    Wash the bell peppers, halve them, trim, and dice as well.

    Peel the cucumber, cut it lengthwise, deseed, and dice. Mix with tomato, pepper, and lemon juice.

    Cook the omelettes in hot butter in four small pans. Add a quarter of the eggs to each pan, let set, flip, bake until golden brown, and transfer to plates. Spoon a tablespoon of the vegetable salad onto each omelette and sprinkle with feta. Distribute remaining salad into bowls and serve separately.
