Ingredients

  • 1 kg asparagus
  • Salt
  • 50 g butter
  • 4 eggs
  • pepper (ground)
  • Basil

Instructions

    Wash the asparagus, peel the lower third and trim the ends. Bring a generous pot of salted water with a bit of butter to a boil. Add the asparagus and cook for about 12-15 minutes.

    In the meantime whisk the eggs with 1 tablespoon of water and a pinch of salt. Heat the remaining butter in a pan, pour in the eggs, let them set briefly, then stir.

    Remove the asparagus, drain it, and arrange on a plate with the scrambled eggs. Sprinkle with pepper and garnish with basil before serving immediately.
