Tomato Cold Soup with Frozen Olive Oil Cubes

Ingredients

  • 2 slices white bread
  • 400 g Tomatoes
  • 2 red bell peppers
  • 2 yellow bell peppers
  • 1 onion
  • 1 cucumber
  • 2 Garlic cloves
  • 400 ml tomato juice
  • 150 ml broth
  • 1 tbsp Lemon Juice
  • sugar
  • Salt
  • Cayenne pepper
  • olive oil (for the ice cubes)

Instructions

    1) Make the ice cubes: Season ice cube trays and fill each with 3-5 mm olive oil. Place in freezer for about 2 hours.

    2) Prepare soup ingredients: Hull the white bread, dice one slice, salt it, and soak in 4 tbsp lukewarm water. Boil tomatoes, peel, deseed, and dice. Wash bell peppers, trim, halve, deseed, remove white membranes, and finely dice. Peel cucumber, cut lengthwise, deseed, and finely dice. Peel garlic and mince finely.

    3) Assemble the soup: Blend the soaked bread, tomatoes, garlic, pepper, and cucumber cubes with tomato juice and broth. Season with lemon juice, sugar, salt, and cayenne pepper. Chill in refrigerator for about 1 hour.

    4) Serve: Remove ice cubes from freezer, pour soup into bowls, and top with the olive oil cubes.
