Ingredients

  • 400 g Tofu
  • 2 EL sesame oil
  • 4 EL soy sauce
  • 150 g glass noodles (no cooking)
  • 8 sheets rice paper (Ø 22 cm)
  • 8 lettuce leaves (e.g., romaine)
  • 1 handful soy sprouts
  • 2 EL freshly chopped cilantro

Instructions

    Dice the tofu, mix with sesame oil and 2 EL soy sauce in a bowl and let it marinate for about 20 minutes.

    Soak the glass noodles according to package instructions, then drain and pat dry thoroughly.

    Dip each rice paper sheet one at a time into a bowl of lukewarm water until soft, remove, lay on a kitchen towel side by side, cover with a damp towel until filling. Wash, clean, and tear lettuce leaves into smaller pieces.

    Briefly stir-fry tofu with soy sprouts in a hot wok (1-2 minutes). On the center of each rice paper sheet spread lettuce and noodles, then top with tofu and sprouts. Sprinkle cilantro and drizzle a little soy sauce. Fold the edges inward and roll tightly. Arrange on plates and serve with sweet‑sour chili sauce or soy sauce for dipping.
