Tofu with Rice and Lentils

Ingredients

  • 60 g brown lentils
  • 700 g tofu (natural)
  • 4 tbsp dark soy sauce
  • 80 g wild rice
  • 200 g cooked white rice
  • Salt
  • 2 dill sprigs
  • 120 g soy crème fraîche
  • pepper (ground)
  • Lemon juice
  • 2 tbsp soy oil
  • 4 tbsp light sesame seeds
  • 1 tbsp vegan margarine (or olive oil)
  • dill (for garnish)

Instructions

    Soak the lentils overnight in water.

    Place tofu with soy sauce in a bowl and let it marinate covered for at least 2 hours. Combine lentils with wild rice, rinse cold, then cook with white rice in about 1 liter of salted water for 35-40 minutes until al dente, stirring occasionally and checking near the end if more water is needed.

    Wash dill, shake dry, finely chop. In a bowl whisk soy cream smooth and season with salt, pepper, and lemon juice.

    Pan-fry tofu in hot oil 4-5 minutes per side until golden brown. Spread sesame on a flat plate and toss tofu in it both sides.

    Stir margarine into the lentil-rice mixture and season with salt.

    Plate sesame-tofu with rice and dill sauce, garnish with dill, and serve.
