Ingredients
- 1 Shallot
- 1 Garlic clove
- 1 walnut-sized piece ginger
- lemongrass
- 2 tsp oil
- 600 ml chicken broth (from the jar)
- 2 tbsp fish sauce
- 2 tbsp rice wine
- Salt
- 150 g tofu (- natural)
- 1 Spring onion
- coriander
Instructions

Peel and finely dice shallot and garlic. Peel and finely dice ginger. Finely chop lemongrass.

Heat oil in a pot. Sauté shallot, garlic, ginger, and lemongrass. Add broth and simmer for a few minutes.

Strain broth and season with fish sauce, rice wine, and salt. Cut tofu into small cubes. Clean, rinse, and finely slice spring onion. Add tofu and spring onion to the broth and heat through. Garnish soup with coriander leaves.
