Lamb in Herb Broth

Ingredients

  • salt (from the mill)
  • pepper (from the mill)
  • 6 tbsp Olive oil
  • 6 Garlic cloves
  • 1 bunch thyme
  • 4 bay leaves
  • 6 sage leaves
  • 200 ml white wine
  • 1 glass (400ml) lamb stock

Instructions

    Rub the meat with salt and pepper. Heat olive oil in a large roasting pan. Brown the meat on all sides. Rinse the garlic cloves (do not peel!). Wash the herbs and pat them dry. Add the garlic and herbs to the pan and sauté briefly.

    Deglaze with white wine and pour in the lamb stock. Simmer uncovered in a preheated oven at 200°C (gas: level 2-3, convection: 180°C) for 90 minutes. Season the broth with salt and pepper.
