Ingredients
- 4 sprigs lemon thyme
- 4 stems parsley
- 4 stems lemon balm
- 2 cloves garlic
- 1400 g small mackerel (ready to cook; 4 small mackerels)
- Salt
- Pepper
- 2 tbsp olive oil
Instructions

Wash all herbs and shake dry. Peel and halve the garlic cloves.

Rinse the mackerels and pat them dry. Season inside and out with salt and pepper.

With a sharp knife, make 4–5 diagonal slashes on both sides of each skin to prevent flare‑ups while grilling.

Place one sprig thyme, one stem parsley, and lemon balm in each fish’s cavity. Add half a garlic clove and brush the fish all over with olive oil.

Put each mackerel on a fish grill grate and close it. Grill each side for 12–15 minutes over high heat.
