Tofu Patties with Radicchio Arugula Salad

Ingredients
- 1 small onion
- 80 g celery root
- 60 g sun-dried tomatoes (in oil)
- 80 g arugula
- 1 head radicchio
- 4 Cherry Tomatoes
- 3 tbsp apple cider vinegar
- 2 tbsp olive oil
- Salt
- Pepper (freshly ground)

- 200 g tofu
- 250 ml vegetable broth
- 100 g corn flour
- ground coriander

Peel the onion and dice finely. Clean, peel, and grate the celery root finely. Drain the tomatoes, reserve the oil, and chop them into small pieces. Wash the arugula, clean it, and roughly chop about one-third of it. Wash the radicchio, dry it, and cut the leaves into strips. Quarter the cherry tomatoes. Mix the remaining arugula with radicchio and tomatoes. Whisk apple cider vinegar with olive oil and season with salt, pepper, and sugar; set aside as dressing.

Crush the tofu with a fork. Heat 1 tbsp of tomato oil in a pot and sauté the tofu while stirring for several minutes until yellow to light brown. Add vegetable broth, stir, remove from heat, then add corn flour, onions, celery root, tomatoes, and arugula. Mix well until a moldable mixture forms. If too soft, add more corn flour; if too firm, add more broth. Season with salt, pepper, and coriander, taste, and shape 16 small patties with damp hands.

Heat 2-3 tbsp of tomato oil in a hot pan and brown the patties on both sides until light brown.
