Tofu Mushroom Skewers

Ingredients

  • 350 g tofu
  • 300 g fresh mushrooms
  • 2 untreated limes
  • 3 tbsp soy oil
  • 0.25 tsp sambal oelek
  • 1 tbsp soy sauce
  • 0.5 tsp liquid honey
  • 0.5 tsp freshly grated ginger
  • 1 pinch ground coriander
  • coriander leaves (for garnish)

Instructions

    Preheat the grill.

    Cut the tofu into 1.5 cm cubes. Clean the mushrooms and wipe them with a paper towel.

    Wash one lime hot, pat dry, and slice thinly. Cut the other lime in half and squeeze out the juice. Mix the oil, sambal oelek, soy sauce, honey, ginger, and coriander; season with salt and pepper. Thread tofu and mushrooms alternately onto wooden skewers and brush with the marinade. Let marinate for 20 minutes, then grill on a hot grill while turning.

    Arrange the finished grilled skewers on a plate, garnish with lime slices and coriander, and serve with peanut sauce and rice if desired.
