Ingredients

  • 600 g white fish fillet (e.g., cod)
  • 8 Cherry tomatoes
  • 1 onion
  • 1 green zucchini
  • 1 yellow zucchini
  • 1 sprig rosemary
  • 2 stalks lemon thyme
  • 1 stalk Parsley
  • 1 Garlic clove
  • 0.5 tsp Chili flakes
  • 1 untreated lemon
  • 4 tbsp olive oil
  • Salt

Instructions

    Wash the fish, pat dry and cut into bite‑size cubes. Wash the tomatoes and halve them. Peel the onion, quarter it and separate the layers. Wash the zucchinis, trim them, cut lengthwise into quarters and slice.

    For the marination wash the herbs, shake dry, pluck leaves or needles and finely chop. Peel the garlic and finely chop as well. Crush the chili flakes in a mortar. Halve the lemons, lightly squeeze and mix the juice with herbs, chili flakes, garlic and oil; season with salt.

    Skewer alternating fish cubes, tomatoes, onions and zucchinis on skewers, brush with marination, let sit 20 minutes then place on a hot charcoal grill. Grill turning occasionally for about 10 minutes, brushing repeatedly with marination.
