Tofu Goulash with Sauerkraut

Ingredients

  • 1 large onion
  • 500 g natural tofu
  • 500 g potatoes (starchy cooking)
  • 2 tbsp Rapeseed oil
  • 300 g sauerkraut
  • 2 tbsp Tomato paste
  • 250 ml vegetable broth
  • 300 ml tomato juice
  • Salt
  • Sweet Paprika Powder
  • ground pepper
  • 4 tbsp Sour cream
  • 4 tbsp chopped parsley

Instructions

    Peel and finely dice the onions. Drain the tofu and cut into bite‑sized pieces. Wash the potatoes thoroughly, then slice them with the skin on.

    Heat the oil in a pot over high heat and sear the tofu until golden. Add the potatoes and onions and sauté briefly. Stir in the sauerkraut. Cook everything together for 5 minutes, then add the tomato paste and mix well. Pour in the vegetable broth and tomato juice, bring to a boil, and simmer until the potatoes are tender. Season with salt, paprika, and pepper.

    Serve the tofu goulash in bowls topped with sour cream and parsley.
