Paprika Rice with Sausage

Ingredients
- 250 g long-grain rice
- Salt
- 2 red bell peppers
- 1 small zucchini
- 1 onion
- 1 tbsp Vegetable oil
- 1 tbsp Tomato Paste
- 400 g peeled tomatoes (canned)
- 200 g Cabanossi sausage (or Debrecziner)
- Salt
- black pepper (ground)
- 1 tsp sweet paprika
- 0.5 tsp hot paprika
- parsley (for garnish)

Cook the rice in double the amount of salted water over medium heat with a closed lid for about 20 minutes, then drain if necessary.

Wash and halve the peppers, remove seeds, and cut into bite-sized pieces or cubes. Trim the zucchini ends, split lengthwise, scoop out seeds with a small spoon, then slice thinly. Peel and finely dice the onion. In a large pan, sauté the onion in hot oil until translucent. Add tomato paste briefly, then add peppers, zucchini, and tomatoes; cook for about 5 minutes.

Slice the sausage and mix it into the rice. Season with salt, pepper, and both paprika varieties to taste. Distribute the rice mixture onto plates and sprinkle with parsley before serving.
