Tofu Burger

Ingredients
- 1 onion
- 1 bunch parsley
- 300 g Tofu
- 3 tomatoes
- 2 tbsp Soy sauce
- 1 egg
- 2 tbsp sesame seeds
- 2 tbsp breadcrumbs
- 2 Tbsp grated Parmesan
- salt (pepper)
- 2 tbsp oil
- 4 poppy seed buns
- 2 tbsp butter
- 8 frisée lettuce leaves
- 1 Red Onion
- 1 tbsp White Wine Vinegar
- 1 tsp Mustard
- 2 tbsp olive oil
- 1 tsp walnut oil

Peel and finely chop the onion. Wash and finely chop the parsley. Crumble the tofu with a fork and mix it with the onion, parsley, soy sauce, egg, sesame seeds, breadcrumbs, and cheese to form a dough. Knead by hand and season with pepper. Shape 4 flat patties from the dough.

Brush the tofu burgers with oil and grill over high heat for about 3 minutes per side.

Slice the tomatoes into rounds. Halve the buns and spread butter on the lower halves.

Wash, trim, and pat dry the lettuce.

Peel the red onion and slice it thinly into rings.

Whisk together the vinegar, mustard, a pinch of salt, pepper, olive oil, and walnut oil to make a vinaigrette. Toss with the lettuce leaves, place them on the lower bun halves, add a tofu burger on top, then layer tomato slices and onion rings. Season with salt and pepper, cover with the upper bun halves, and serve immediately.
