Tofu and Mango Burger

A fresh tofu and mango burger featuring smoked tofu, mozzarella, arugula, tomatoes, onions, garlic, and ciabatta buns. Try this and other recipes from Spoonsparrow!

Ingredients

  • 400 g smoked tofu
  • frying oil
  • 1 ball of mozzarella
  • 1 onion
  • 1 small clove of garlic
  • 1 tbsp Olive Oil
  • Salt
  • Pepper
  • 2 Tomatoes
  • 100 g Arugula
  • 1 Mango
  • 4 ciabatta buns

Instructions

    Preheat the oven to 160°C.

    Slice the tofu into eight pieces and deep‑fry in hot oil until golden. Drain on kitchen paper. Slice mozzarella thinly, then top half of the tofu slices with two mozzarella slices each and cover with the remaining tofu. Place on a parchment‑lined tray and bake for about 10 minutes. Peel and finely slice the onion; mince the garlic. Heat oil in a pan and sauté the onion mixture. Season with salt and pepper. Wash and slice the tomatoes. Rinse, dry, and shake off excess water from the arugula. Peel the mango and cut the flesh into slices around the pit. Halve the ciabatta buns and toast briefly in the oven.

    Top the bottom bun halves with arugula, add the tofu slices, then layer on tomatoes. Spread the onion mixture over the tomatoes. Place mango slices on top and sprinkle with a little pepper. Cover with the top bun halves and serve.
