Tofu Burger

Ingredients

  • 1 tbsp oil
  • 1 Carrot
  • 1 small onion
  • 1 Garlic clove
  • 2 tsp mild curry paste
  • 1 tsp tomato paste
  • 300 g tofu (1 package)
  • 25 g whole wheat flour
  • 25 g chopped nuts (optional)
  • 1 tbsp wheat flour
  • Salt
  • Pepper
  • oil for frying
  • 1 ciabatta loaf
  • tomato relish (pre-made)
  • mayonnaise
  • lettuce leaves

Instructions

    Peel the carrot, onion and garlic, dice finely, then sauté in hot oil. Add curry paste and tomato paste, stir, heat through, and remove from heat.

    Mash the tofu with a potato masher and combine with the vegetables in a bowl. Mix in whole wheat flour and chopped nuts, season with salt and pepper, and form into four patties. Dust both sides lightly with flour.

    Pan‑fry each side in hot oil for about 3–4 minutes until golden brown, then drain on paper towels.

    Serve on toasted ciabatta with lettuce, tomato relish and mayonnaise.
