Ingredients

  • 1 tomato
  • 0.5 Red Onion
  • 200 g baby spinach
  • 1 small white onion
  • 4 tbsp plant oil
  • 100 g Ricotta
  • 50 g grated Parmesan
  • 1 egg
  • 100 g flour
  • Salt
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)
  • 4 buns (with poppy seeds)

Instructions

    Wash the tomato and slice into rounds. Peel the red onion and cut into rings. Wash the spinach thoroughly and chop finely. Peel the white onion and dice it finely. Sauté in 1 tbsp hot oil until translucent, then remove and combine with spinach, ricotta, parmesan, egg, and flour in a bowl. Knead well and season with salt, pepper, and nutmeg. If the mixture is too soft, fold in breadcrumbs. Shape four large patties with damp hands and fry in the remaining hot oil for about 6 minutes per side.

    Halve the buns, place the patties on them, distribute tomato slices and onion rings on top, and close with the bun tops. Serve with a tomato salsa, for example.
