Tofu Bread Spread

Ingredients

  • 400 g Tofu
  • 4 Garlic cloves
  • 100 g canned chickpeas
  • 70 ml Olive oil
  • 1 Organic lemon
  • Salt
  • Pepper
  • chopped chives for garnish

Instructions

    Drain the tofu and cut into cubes. Peel the garlic and combine with tofu and drained chickpeas in a blender. Add half of the olive oil. Wash the lemon, zest thinly along its length, slice into fine strips, squeeze juice and add some to the mixture. Blend on high speed until smooth while slowly adding the remaining oil; season with salt and pepper. Blanch the lemon strips briefly in boiling salted water.

    Transfer the spread to a bowl, sprinkle with pepper and chopped chives, and garnish with lemon zest before serving.
