Toasted Bread with Shrimp

Ingredients

  • 8 large shrimp
  • 4 tomatoes
  • 2 Garlic cloves
  • 1 stalk leek
  • 3 tbsp butter
  • Salt
  • Pepper
  • 12 thin white bread slices
  • 4 fried basil leaves

Instructions

    Peel, clean and devein the shrimp; cut along the back. Blanch tomatoes in boiling water, peel, quarter and seed them.

    Peel and finely chop garlic cloves; mix with tomatoes. Wash leek and slice into strips. Heat 1 tbsp butter in a pan and sauté leeks until translucent. Add 50 ml water, cook until slightly softened, letting liquid evaporate. Season with salt and pepper.

    Toast bread slices in 1–2 tbsp butter until golden brown.

    Sauté shrimp slowly in the remaining butter, seasoning with salt and pepper. Arrange toasted bread on plates, top with tomatoes, leeks and shrimp. Garnish with fried basil leaves and serve.
