Ingredients

  • 12 baguette slices
  • 4 tomatoes
  • 2 Spring Onions
  • 4 tbsp pitted black olives
  • 5 basil leaves
  • 4 tbsp olive oil
  • 3 tbsp white balsamic vinegar
  • Salt
  • Pepper (freshly ground)
  • 200 g halloumi

Instructions

    Toast the baguette slices in a grill pan, brushing with olive oil if desired. Wash and halve the tomatoes, remove seeds, and finely dice the flesh. Clean and slice the spring onions diagonally. Slice the olives. Rinse the basil leaves, shake dry, and cut into fine strips. Combine tomatoes, onions, olives, and basil; mix with olive oil and vinegar, seasoning with salt and pepper.

    Slice the halloumi cheese and quickly grill in the pan until golden. Place the cheese on the toasted bread slices and top with the tomato salad. Serve cold or at room temperature.
