Ingredients

  • 1 egg
  • 200 ml milk
  • 100 g flour
  • 1 tbsp sugar
  • 2 tbsp liquid butter (and butter for frying)
  • 300 g mixed berries (e.g., raspberries and blueberries)
  • 150 g yogurt
  • 150 g quark
  • 2 tbsp vanilla sugar
  • 1 tsp lemon juice
  • powdered sugar
  • cocoa powder

Instructions

    Whisk the egg, milk, flour, and sugar into a smooth batter and let rest for about 10 minutes.

    For the filling, puree the berries and set aside about ¼ for garnish. Mix yogurt with quark, vanilla sugar, and lemon juice until smooth, then fold in the berries.

    Heat some butter in a pan (or crepe pan) and cook the batter to make four thin crepes. Place on plates, fill with the yogurt mixture, fold together, and top with remaining berries. Dust with cocoa and powdered sugar before serving.
