Ingredients

  • 800 g lamb meat (e.g., shoulder)
  • 2 onions
  • 2 EL olive oil
  • 1 TL ginger powder
  • 1 TL ground turmeric
  • 0.5 TL ground cumin
  • 1 pinch cinnamon
  • Salt
  • Pepper
  • 400 ml beef broth
  • 100 g green grapes (seedless)
  • 200 g couscous (instant)
  • 100 g mixed nuts (pistachios, pine nuts, almonds)

Instructions

    Rinse the meat, pat dry and cut into bite‑sized cubes. Peel and finely dice the onions. Gently brown the meat in hot oil in a tajine. Add the onions, ginger, turmeric, cumin, cinnamon, salt, pepper and pour in some broth. Cover and simmer gently for about 45 minutes, adding more broth if needed.

    Wash the grapes. Together with the couscous, a little broth and the nuts, add to the tajine and cook for another ~15 minutes until done. Add more broth if necessary, but it should have been fully absorbed by the end of cooking.
