Enjoy this Thai fruit salad with fresh ingredients and a zesty lime dressing from Spoonsparrow!

Ingredients

  • 100 g basmati rice
  • 1 Papaya
  • 1 small red chili pepper
  • 300 g fresh pineapple
  • 1 Mango
  • 1 piece ginger
  • 2 tbsp almond oil
  • 2 untreated limes
  • 2 tbsp sugar
  • 1 small pitahaya

Instructions

    Cook the rice according to package instructions in lightly salted water with the sliced chili pepper. Halve the papaya, remove seeds and peel the halves. Peel the mango and cut the flesh into pieces away from the fibrous core. Cut the papaya and pineapple into chunks.

    Peel the ginger. Warm almond oil, grate the ginger into it and sauté briefly. Grate one lime, squeeze juice from both limes. Add lime zest, juice of one lime, and sugar. Stir this mixture into the rice and let cool.

    Halve the pitahaya, scoop out the flesh and blend with remaining lime juice. Arrange the fruits on top of the rice (remove chili pepper) and drizzle with the pitahaya sauce.
