Oven Potato with Tuna Filling

Ingredients
- 8 medium potatoes
- olive oil
- Sea salt
- pepper (ground)
- 1 green bell pepper
- 1 Shallot
- 120 g natural yogurt
- 250 g tuna (in own juice, canned)','1 splash lemon juice

Preheat the oven to 180°C (356°F) with top and bottom heat.

Wash the potatoes thoroughly, pat dry, place on a parchment-lined baking sheet, drizzle with olive oil, season with salt and pepper, and bake in the preheated oven for about 50 minutes.

Meanwhile, wash the bell pepper, halve it, remove seeds and white membranes, and dice into small cubes. Peel the shallot, finely chop, and mix with the pepper and yogurt. Drain the tuna well, flake with a fork, and stir into the yogurt mixture. Season with salt, pepper, and lemon juice.

Remove the potatoes from the oven, cut them lengthwise and gently open them. Fill with the tuna mixture, arrange on plates, and serve sprinkled with extra pepper.
