Ingredients
- 500 g flour
- 250 g cold butter
- 125 g sugar
- a pinch of salt
- 2 Eggs
- jam
- 2 egg yolks
- powdered sugar (for dusting)

Quickly knead the dough ingredients together, shape into a ball, wrap in cling film and chill for about 30 minutes.

On a floured work surface press the dough flat and roll it out to about 4 mm thickness.

Using cookie cutters of equal shape but different sizes, cut an equal number from the dough. Punch a hole in the center of the smallest cookies.

Whisk egg yolk with 1 tbsp water, brush the middle and small-sized cookies from below, stack them, place a small dollop of jam in the roundness, bake in a preheated oven at 180°C for about 12 minutes until pale yellow, remove, let cool. Dust with powdered sugar.
