Terrace Cookies

Ingredients
- 2.5 tbsp Stevia Sweetener (Stevia Sweetener)
- 3 tbsp milk
- 1 egg
- 140 g butter
- 1 tsp lemon zest
- 1 tbsp Lemon Juice
- 1 tbsp agave syrup (or apple syrup as substitute)
- 300 g flour
- 1 tsp Baking powder
- flour for dusting
- 200 g black currant diet jam
- Stevia Sweetener for dusting

Whisk the Stevia granules with the milk until smooth. Beat the egg and fold into the mixture. Then stir in the butter, lemon zest, lemon juice, and agave syrup. Mix flour with baking powder, incorporate, and knead everything into a homogeneous dough. If it is too firm, add a little water. Taste a small piece of dough and adjust sweetness if desired. Shape into a ball and refrigerate for 1 hour.

Preheat the oven to 180°C (350°F) with top and bottom heat. Line two baking sheets with parchment paper.

Knead the dough again on a floured surface, roll it out to about 4 mm thickness, and cut out cookies of various sizes using different cutters. In one‑third of the cookies cut small circles.

Place the cookies on the lined baking sheets. Knead the remaining dough together and cut more cookies.

Slide the trays into the preheated oven and bake for 10–15 minutes. Warm the jam in a small pot until it becomes liquid. Remove the cookies from the oven, place them immediately on a cooling rack, and spread the black currant jam on each cookie. Stack three cookies of different sizes on top of each other and press lightly. Dust the finished cookies heavily with Stevia Sweetener and let cool.
