Ingredients

  • 5 sheets gelatin
  • 1 tsp Earl Grey tea
  • 2 tbsp honey
  • 200 ml whipping cream
  • elderflower buds
  • violet flowers
  • orange zest (unprocessed)

Instructions

    Soak the gelatin in cold water.

    Pour 200 ml boiling water over the tea and let steep for about 3 minutes, then strain into a bowl. Dissolve the squeezed gelatin with the honey in the strained tea. Stir in the cream and pour into four small glasses. Chill for at least 3 hours.
