Ingredients

  • 300 g tender wheat
  • Salt
  • 250 g green asparagus
  • 2 carrots
  • 150 g green beans
  • 2 tbsp freshly chopped parsley
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • pepper (ground)

    Cook the wheat according to package instructions in boiling salted water.

    Peel the lower third of the asparagus, cut off woody ends, slice stalks diagonally into 3 cm pieces and blanch in boiling salted water for about 7 minutes; drain, shock with cold water, and let dry. Peel carrots, halve lengthwise, and slice diagonally. Wash beans, trim, and blanch both separately in boiling salted water for 8 minutes; drain, shock with cold water, and let dry.

    Let the wheat cool, mix with vegetables, parsley, lemon juice, and oil, season with salt and pepper. Serve arranged in bowls.
