Ingredients

  • 1 kg pork belly
  • 2 tbsp oil
  • 8 shallots
  • 1 parsley root
  • 250 g celery
  • 4 Garlic cloves
  • 4 thyme sprigs
  • 500 ml meat broth
  • 1 bay leaf
  • 2 cloves
  • 0.5 tsp juniper berries
  • 0.5 tsp Peppercorns
  • Salt
  • pepper (ground)

Instructions

    Peel the vegetables and cut them into large cubes.

    Place bay leaf, cloves, juniper berries, and peppercorns in a spice bag and tie tightly together.

    Wash the pork belly, pat dry, and score the skin in a diamond pattern. Rub heavily with salt and pepper and sear in hot oil. Remove from pan and sauté the vegetables in the same fat. Add the meat broth and place the pork belly skin-side up. Put the spice bag into the broth and braise in the oven at 100°C for about 6 hours. The meat is done when a fork easily slides in and out. During the last hours add thyme. Finally, if desired, briefly broil the pork to crisp the skin. Season the sauce with the braised vegetables, remove the spice bag, and serve on plates with sliced pork.
