Ingredients

  • 100 g surimi
  • 1 piece cucumber (ca. 5 cm)
  • 1 piece pickled daikon radish (ca. 5 cm)
  • 0.25 avocado
  • lemon juice (for brushing)
  • 200 g ready sushi rice
  • vinegar water (for hands)
  • 3 roasted nori sheets
  • sesame seeds (for sprinkling)
  • pickled ginger (for serving)
  • wasabi (for serving)
  • soy sauce (for serving)

Instructions

    Carefully unwrap the surimi sticks and slice the crab meat into strips. Wash the cucumber, halve it, remove the seeds, and cut it into very thin slices. Pat the daikon dry and slice it into strips. Peel the avocado, remove the pit, and cut the flesh into very narrow strips (about 6 cm long). Brush immediately with lemon juice to prevent browning.

    Divide the sushi rice into six portions and shape each portion into a long oval using hands dampened with vinegar water. Cut the nori sheets lengthwise in half. Take one sheet with the smooth side down in the left hand and place a rice oval on the upper half.

    Layer several strips of avocado, cucumber, daikon, and crab meat on top and roll the mixture tightly like a bag, pressing the ingredients firmly together as you roll. Sprinkle with sesame seeds. Serve with pickled ginger, wasabi paste, and soy sauce.
