Tea Parfait

Ingredients
- 75 ml black tea (from 1/2 tsp tea leaves)
- 3 egg yolks
- 3 tbsp sugar
- 200 g whipping cream
- 2 oranges
- 1 tsp freshly grated ginger
- orange zest
- mint (for garnish)

Add 2 egg yolks and 2 tbsp sugar to a metal bowl, pour in the tea and whisk over a hot water bath until thick. Then cool the mixture in an ice bath while stirring, whip the cream stiff and fold it in. Pour into a loaf pan and freeze for 3 hours.

Peel the oranges thoroughly with a sharp knife, removing the white pith. Cut fruit segments from the separating membranes and catch the juice that drips out. Squeeze the remaining orange parts to collect more juice.

Cut the zest into very fine strips. Whisk the remaining egg yolk with leftover sugar and orange juice over a hot water bath until frothy, then add ginger.

For serving slice the parfait into thick rounds and garnish with orange segments, ginger sauce and mint leaves.
