Asparagus Tart
This delicious asparagus tart brings spring to the table!
Ingredients
- 300 g flour
- 0.5 tsp Baking powder
- 1 tsp salt
- 160 g cold butter
- 1 egg
- 1 yolk

- 800 g green asparagus
- Salt
- 4 eggs
- 220 ml milk
- 220 ml whipping cream
- 2 tbsp Cornstarch
- 200 g grated hard cheese (e.g., young Gouda)
- Pepper
- Nutmeg (freshly grated)

Mix flour with baking powder and salt, then sift onto the work surface. Create a well in the center, cut butter into small pieces and spread around the edge. Add the egg and yolk to the well. Use a large knife to cut through everything, creating small crumbs. Quickly knead into a smooth dough and wrap in cling film. Refrigerate for at least 1 hour.

Meanwhile wash the asparagus, peel the lower third and trim hard ends. Blanch in a pot of boiling salted water for about 4 minutes. Drain and let dry well.

Preheat oven to 180°C (350°F) with upper and lower heat. Butter and flour a tart pan. Roll out dough between two sheets of cling film slightly larger than the pan. Place it in the pan and form a rim. Arrange asparagus spears side by side on top. Whisk eggs, milk, cream, cornstarch, and cheese together. Season with salt, pepper, and nutmeg. Pour the custard evenly over the tart.

Bake for 1 hour. Let cool slightly before serving warm or cold.
