Ingredients

  • For the dough
  • 200 g Flour
  • 100 g cold butter
  • 1 pinch salt
  • 1 tsp sugar
  • 1 egg
  • 750 g apples
  • 75 g butter
  • 200 g sugar

Instructions

  1. 1.

Sift the flour onto a work surface, mix with salt and sugar, then press a well in the center. Cut the cold butter into small pieces and distribute around the well; add the egg to the center and use a knife to cut through all ingredients until small dough crumbs form. Quickly knead with hands into a dough, shape into a ball, wrap in cling film and chill for about 30 minutes.

  2. 2.

Wash apples, remove cores and quarter them.

  3. 3.

Grease a tart pan with 50 g butter. Sprinkle a thick layer of sugar (about 100 g) over the butter and arrange apple quarters in layers on top of the sugar.

  4. 4.

Heat the pan over medium heat for about 10 minutes, then remove from the stove when the sugar begins to caramelize; let it cool briefly, sprinkle the remaining sugar, and scatter the rest of the butter in flakes on top.

  5. 5.

Roll out the dough, lay it over the fruit layer, and press the edges down into the pan.

  6. 6.

Bake the tart in a preheated oven at 220 °C (convection) for about 30 minutes, remove, let cool slightly, then flip onto a serving plate. Serve warm.
