Filo Cups with Raspberry Quark

Ingredients
- 300 g filo dough
- 2 EL Butter
- 250 g quark
- 250 g yogurt
- 200 ml whipping cream
- 600 g raspberries
- 40 ml raspberry liqueur
- Puderzucker
- Zitronen
- Minze (für die Garnitur)
Instructions

Lay layers of filo dough on top of each other and cut into 6 squares. Place them slightly offset in round, heat‑proof molds and brush with melted butter. Dust with powdered sugar and bake in a preheated oven at 180°C fan for about 10 minutes until golden brown. Remove, take out of the molds and let cool.

For the raspberry cream, puree raspberries and set aside some for garnish. Puree the remaining raspberries and strain through a sieve.

Whisk together quark, yogurt and raspberry liqueur until smooth. Fold in whipped cream and sweeten with powdered sugar to taste. Refine with liqueur and lemon juice. Fill the cooled molds with the cream and serve garnished with the remaining raspberries and mint leaves.
