Tajine with Chicken, Olives, Artichokes and Onions

Ingredients
- 1 pre-cooked poultry (about 1.2 kg)
- Salt
- Pepper (freshly ground)
- 4 small onions
- 2 artichokes (canned)
- 1.5 lemons
- 50 g butter
- 2 tbsp olive oil
- 3 Garlic cloves
- 1 tsp ginger powder
- 0.5 can saffron
- 100 g green olives (pitted)
- 2 tbsp freshly chopped coriander
- 2 tbsp freshly chopped parsley
- parsley for garnish
Instructions

Slice the lemons into thick rounds.

Heat butter and oil in a pot, add onions and sauté briefly. Add pressed garlic, ginger, saffron and 250 ml water, stir well, season with salt and pepper. Add poultry pieces, turn several times until coated with sauce. Bring to boil, cover and simmer gently for about 30 minutes.

Add olives, lemons, artichokes, coriander and parsley, cover and simmer for another 15 minutes. Taste. When the chicken is cooked, remove and keep warm covered. If the sauce is too thin, reduce further over high heat. Arrange the chicken and ingredients on a preheated plate (tajine) and serve immediately.
