Tagliatelle with Shrimp

Ingredients

  • 1 Carrot
  • 1 onion
  • 6 Garlic cloves
  • 1 red chili pepper
  • 8 tbsp olive oil
  • 200 g canned tomatoes (drained)
  • Salt
  • Pepper (freshly ground)
  • 350 g tagliatelle pasta
  • 1 tbsp finely chopped parsley
  • 200 g shrimp, peeled and ready to cook
  • 1 piece of parmesan

Instructions

    Peel the carrot, onion, and 4 garlic cloves and dice them into small cubes. Wash the chili pepper. Heat 6 tbsp olive oil and sauté everything, add drained tomatoes, lightly crush, and simmer for about 15 minutes.

    Cook pasta in plenty boiling salted water until al dente.

    Peel remaining garlic and press through a garlic press.

    Slice shrimp diagonally into ~2 cm thick pieces. Heat remaining olive oil, fry shrimp for 2 minutes, then add parsley and garlic to the tomato sauce. Season with salt and pepper.

    Drain pasta, mix with sauce, and serve on preheated plates. Grate parmesan over the top using a microplane or truffle grater.
