Ingredients

  • 2 onions
  • 1 Garlic clove
  • 1 tbsp butter
  • 150 ml dry white wine
  • 250 ml vegetable broth
  • 400 ml orange juice
  • 1 can saffron (0.1 g)
  • Salt
  • Pepper (freshly ground)
  • 2 oranges
  • 2 zucchinis
  • 400 g tagliatelle
  • 8 goat cheese wedges (≈30 g each)
  • 2 tsp Honey
  • chives sprigs for garnish

Instructions

    Peel the onions and garlic, then sauté them in butter until translucent. Deglaze with wine and let reduce slightly. Add broth, orange juice, and saffron; simmer gently for about 15 minutes. Season with salt and pepper.

    Peel the oranges, separating the segments from the membranes. Wash the zucchinis, trim ends, and slice into thin ribbons. Cook the tagliatelle in salted water until al dente, adding the zucchini ribbons during the last two minutes of cooking.

    Preheat the oven to grill mode. Arrange the goat cheese wedges on a baking sheet lined with parchment paper and bake for 2–5 minutes until lightly browned.

    Blend the sauce until smooth; warm the orange segments briefly in it and adjust seasoning. Toss the noodles and zucchini into the sauce, then plate with goat cheese on top. Sprinkle chives, grind fresh pepper over, and serve immediately.
