Taboulé Salad with Cheese Toast Sticks

Ingredients

  • 300 ml vegetable broth (instant)
  • 150 g bulgur
  • 1 Lime
  • 1 bunch mint
  • 2 bunch parsley
  • cucumber
  • 4 tomatoes
  • 2 shallots
  • 4 Spring Onions
  • 2 tbsp olive oil
  • 120 g goat gouda cheese
  • 2 slices toast bread

Instructions

    Bring the vegetable broth to a boil in a pot, add the bulgur, remove from heat and let it soak for about 15 minutes. Squeeze the lime juice and mix into the bulgur. Let cool slightly.

    Rinse the herbs, shake dry and avoid chopping too finely. Rinse the cucumber, halve lengthwise, scrape out seeds and dice finely. Wash tomatoes, quarter them, remove seeds, then dice. Peel shallots, clean spring onions and rinse. Chop both finely. Heat 1 tsp olive oil and sauté shallots and spring onions.

    Combine herbs, cucumber, tomatoes, shallots, spring onions and the remaining olive oil with the bulgur. Season with salt and pepper to taste.

    Grate goat gouda cheese. Sprinkle 60 g of grated cheese over toast slices and briefly broil under a preheated grill until lightly browned. Cut diagonally. Arrange the salad on a plate, sprinkle with remaining cheese shreds, and serve alongside the toasted cheese sticks.
